From the plantingconditions to processing methods and storage, La Minita Company deliberatelycontrols every single production procedure to produce high-quality coffee. TheLas Pastores mill of La Minita is renowned for its high processing quality anddelivering the terroir characteristics of Antiqua, Guatemala. Antiqua islocated in middle highlands of Guatemala, and the volcanic soil and highaltitude bring delicate complexity to coffees. 

 

In addition to thegeographical advantages - high altitude and cool weather that reduce pests, LaMinita doesn't use pesticides and have fewer pests issues in it. Slight pestsdon't damage coffees too much. 

 

When the rainy season isabout to end, the coffee cherries start to ripen and cherries change colorsfrom green to red. However, the ripeness of coffee cherries is very slow andnon-consistent. Thus, the harvest must be carefully implied and pick up onlyfully-ripped, dark red cherries. One seasonal harvest could divide into 5times. The estate tests soil twice a year to decide the fertilization methodcarefully. They do care about anything for increasing productivity andfertilize three times a year. Besides, they use microelements like Zinc, boron,copper to provide more nutrients for trees and prevent its disease. Thesescientific planting methods are how La Minita maintains the consistency andquality of La Flor coffees.
